Position Summary

Polishers ensure every tabletop item—glassware, silverware, plates, decanters, service utensils—is spotless, properly staged, and service-ready. You’ll maintain par levels, organize service stations, uphold sanitation standards, and partner with servers, runners, and stewarding to deliver a polished, efficient dining room that reflects JAG’s high standards.

Key Responsibilities

Quality & Standards

  • Inspect and polish glassware, silverware, plates, and service tools to a pristine, streak-free finish.
  • Check for chips, cracks, stains, and water spots; remove damaged items from circulation and report to leadership.
  • Follow JAG standards for tabletop setup, polish technique, and presentation details.

Tabletop Readiness & Staging

  • Build and stage roll-ups, markups, and preset items to spec by meal period and menu.
  • Maintain par levels of polished wares at server stations, side stands, and service bars.
  • Ensure correct glassware and silverware are available by course and seat number needs.

Organization & Stocking

  • Keep polishing areas, stations, and storage shelves organized, labeled, and mapped.
  • Rotate inventory using FIFO; manage polishing linens/microfiber cloths and replace as needed.
  • Restock linens, napkins, polish kits, trays, and caddies to par.

Sanitation, Safety & Compliance

  • Follow DOH and JAG sanitation standards: clean hands/gloves, polish cloth hygiene, and cross-contamination prevention.
  • Operate glasswasher/3-compartment sink with correct wash/rinse/sanitize steps; verify sanitizer PPM and log as required.
  • Handle hot glassware safely; follow glass break and ice contamination protocols; use PPE and chemicals per SDS.

Team Support & Communication

  • Support servers, runners, and bartenders during service with timely glassware/silver restocks.
  • Participate in pre-shift lineups; communicate 86s, shortages, or quality issues in real time.
  • Assist with opening/closing and deep-clean sidework (polish stations, racks, shelves, mats).

Events & Private Dining (as applicable)

  • Stage PDR and banquet sets (chargers, specialty glass, cutlery kits) to event specs and timelines.
  • Support quick turns between events with accurate resets.


Requirements

Required Qualifications

  • 6+ months of FOH support, polishing, stewarding, or related experience in high-volume restaurants preferred; we’ll train the right candidate.
  • Extreme attention to detail and pace; ability to maintain standards during busy service.
  • Knowledge of basic sanitation; Food Handler certification (or ability to obtain).
  • Clear, professional communication; reliable attendance and teamwork.
  • Schedule flexibility (nights, weekends, holidays).

Working Conditions & Physical Requirements

  • Stand/walk for extended periods (up to 8+ hours); frequent bending, reaching, and repetitive motions.
  • Lift/carry up to 35–40 lbs.; safely handle trays and racks of glassware.
  • Work around hot/cold items, steam, and cleaning chemicals; slip-resistant footwear required.
