Hotel Woolstore 1888 - Handwritten Collection, stands as one of Sydney’s premier heritage hotels. Located in the vibrant heart of Darling Harbour, our property seamlessly blends rich historical charm with modern design, featuring industrial-chic interiors and lively pop art.

Originally built in 1888, Hotel Woolstore 1888 is the fourth oldest surviving wool store in Sydney. Today, it serves as a luxurious hotel within the Accor portfolio, offering 90 meticulously designed guestrooms, an acclaimed restaurant and bar, and versatile spaces for meetings and events.

We are currently seeking a skilled and passionate Executive Chef to join our culinary team at PERCY, our Spanish inspired, award-winning restaurant.

Job Description

As the Executive Chef, you will take the lead of our culinary team, orchestrating exceptional dining experiences that embody creativity and excellence. In collaboration with our General Manager and Food and Beverage Manager, you will ensure the seamless operation of our establishment, maintaining the highest standards of quality, profitability, and industry reputation.

Your leadership will inspire a dedicated team to create remarkable Spanish inspired dishes, providing a valuable opportunity for career advancement.

You will also play a pivotal role in mentoring and guiding the kitchen team. You will foster development and help them achieve their fullest potential. Key responsibilities will include designing innovative menus, managing costs with precision, and ensuring that all service areas are consistently prepared for optimal efficiency.

Staying abreast of industry trends and cultivating a cohesive and motivated kitchen atmosphere will be essential as you uphold our high standards. Furthermore, you will implement special promotions and leverage your expertise to contribute to our continued success.

Salary: $98,000 - $100,000 + Superannuation

Qualifications

  • A seasoned Executive Chef with demonstrated leadership experience, or a highly capable Sous Chef ready to take the next step in their career 
  • Minimum qualification required: Certificate III in Commercial Cookery and Food Safety Supervisor Certification
  • Strong experience in hotel kitchens and stand-alone restaurants highly regarded, along with a passion for creating exceptional Spanish-inspired cuisine
  • Proven ability to manage resourcing needs, plan and delegate tasks, and motivate the team to meet daily objectives
  • Comprehensive knowledge of food hygiene, HACCP, and workplace health and safety (WH&S)
